Mac N Cheez

Good morning!

It is still dumping rain on us up here today.  So of course I busted out the trusty rain boots for my trip to work.

I love them.  They’re nothing special… I got them at Walmart about 4 or 5 years ago.  But they’ve held up well, and I they make rainy days a little brighter. 🙂

My breakfast today is pretty typical.

Notice the little green specks in my smoothie?  I think my VitaMix is dying.  A VitaMix green smoothie is usually solid colored because everything blends so well, so seeing spinach bits is a little disconcerting for me.  Doesn’t keep it from being delicious though.

I’ve also got some yerba mate with lemon juice.  Such a good wake-up brew.

As I mentioned in last night’s post, Keenan had some homemade vegan mac and cheese waiting for me when I got home.  My entire life, I have always been a huge mac and cheese lover.  Actually, during my last year of college, one of my most frequent study snacks was Easy Mac with some broccoli chopped up, all stuck in the microwave together.  As such a big fan of the regular version, I honestly wasn’t expecting too much, but he really impressed me with this dish.  It also definitely proved that he’s understanding the whole vegan cooking thing.

He even wrote down his recipe for me, but then he complained that someone would probably steal his recipe and go open up a restaurant somewhere.  I think he’s a little full of himself. 😉

Vegan Mac N Cheez

1 package tube-shaped pasta

1 cup Daiya cheddar flavor

1/3 cup nutritional yeast

1/8 cup sweet onion, diced

1/8 cup red bell pepper, diced

3 grape tomatoes, diced

Cook the pasta.  Drain, and return to the pan.  While still hot add the rest of the ingredients and mix until the Daiya is melted and everything is combined well.

This recipe was soooo amazing.  It was creamy and cheesy and everything I could have hoped for.  I ended up eating two big bowls, and I packed the leftovers to take for my dinner at work tonight.  It’s going to be so delicious that I’m already excited just thinking about it.  If you love mac and cheese anywhere near as much as I do, you should really try this recipe.  You won’t be disappointed.

The Most Epic Vegan Grilled Cheese Ever

Happy Easter!

I’m sure most of you have some pretty awesome meals planned, and family get-togethers going on today, but, as per Sunday usual, I am on my way to work.  I really don’t mind though.  Even though, apparently, Easter doesn’t count as a government holiday, so I’m not getting holiday pay. 😦  I guess that’s why I didn’t mind working on both Thanksgiving and Christmas last year.

Anyway, if you haven’t noticed, the bf and I seem to create some of our most awesome food combos at night after I get off work.  Last night was no exception.  I decided that I wanted a grilled cheese sandwich.  Grilled cheese was a staple for me all through college, and has always been a favorite of mine.  I still hadn’t tried making one since becoming vegan though.  Since I had some Ezekiel bread, cheddar Daiya, and Earth Balance, I went to work.

Then, the bf decided to get creative.

Why not throw some Cholula hot sauce into the grilled cheese while it’s cooking, and then top it off with some leftover Mmmm sauce and another sprinkle of cheese?

So this beauty was born.

I cannot even begin to tell you how amazing this was.  When they say Mmmm sauce goes with everything, they mean EVERYTHING.  Go Mama Pea!

The bf ate three of them (vegetarian-style with Tillamook cheddar cheese)!  Shhhhhh!  Don’t tell anyone!

I want to try it with with a chipotle black bean burger. (Costco trip tomorrow!)

What are your Easter plans?

I will be ensuring that the hospital patients get a good Easter dinner. 🙂

Pizza Night!

Hey guys! How’s it going?

I just had a nice couple of days off from work and now I’m on my way back to Seattle for another day at the hospital.   I did get a chance to make some fun food while I was off though, including 1/2 vegan/ 1/2 vegetarian pizza from scratch.

I had been craving pizza for a couple weeks, and after a failed attempt about a week ago where in the middle of making some Bob’s Red Mill Gluten-Free Pizza Crust, I dropped and broke the bowl the crust was in, getting the dough full of broken glass.  Since we didn’t have crust we put the project on hold.  However, watching Connery play Bond in Thunderball seemed like the perfect occasion to give pizza another shot.

Vegan/Vegetarian Pizza

For the crust I used the Basic Pizza Dough recipe from 1,000 Vegan Recipes by Robin Robertson.  However, I substituted whole wheat flour for the all-purpose flour called for in the recipe both for nutritional value and because I think it has a better flavor. (And because it’s what happened to be in my cupboard!)

For the sauce, the bf combined:

  • 2 cans tomato paste
  • 1T garlic powder
  • 1T oregano leaves
  • 1T dry cilantro leaves

Our toppings included diced scallions, baby sweet bell peppers, spinach and artichoke hearts.  You can be creative with pizza and use whatever veggies you have on hand.  The bf’s half had mozzarella cheese, and my side had Daiya vegan “mozzarella cheese”. 

I baked the pizza at 45o degrees F for about 30- 45 minutes.

We devoured almost the entire pizza.  I had one slice of my half left that I ate for breakfast the next morning.  I seriously think homemade pizza is wayyyy better than store-bought.  Not only do you get to customize it exactly to fit your preferences, but you also know how much better it is for your body.
