Crazy Days

Hello!  Getting excited for the 4th yet??  I know I am!  We don’t even have real plans yet, but I know it’ll be great no matter what happens.  I mean, come one, GO AMERICA!!!

This morning was another one of those lovely mornings where I was not exactly a happy little girl.  I woke up in time to go running before work, had my work clothes on, and was ready to head out the door when I noticed I’d missed a call from my dad.  Dang it!  I realized that Keenan and I were supposed to go help him move a clothes dryer this morning.  So, I gave up on my run, hauled Keenan out of bed, drove to my father’s house, and pouted like a little girl because I didn’t get to go running.

We got back to our apartment with just enough time to shower and get ready to go (benefits of having food for work prepared beforehand.)  At some point, I made the decision that I was going to drive to work instead of the usual public transport.  I love getting to spend some extra time in the car with my boyfriend, especially on my grumpier days.  He’s kinda awesome.  I did miss breakfast/lunch in all the chaos, but I ate a peach on the road, and just dealt with being hungry until my first break at work. 

I brought some of my Red Cabbage Slaw with chickpeas to eat for my lunch.

Definitely just as good the second time around.  I will totally be making this again very soon!  It’s just so easy and delicious!

Along with it, I enjoyed a mix of fruit punch and Sierra Mist.

I’m not usually a big soda drinker, but I was craving something fruity and fizzy to help wake me up when I got to work, and this really hit the spot.  I continued sipping on this for the entire duration of my shift.

My second meal was a can of Wolfgang Puck’s lentil and vegetable soup.

I think this is one of my favorite canned lentil soups.  Lots of veggies mixed in with the lentils!

In other news,today I put in a request for a week off of work at the end of July.  What can we possibly be up to???  I’ll let you know when we know more details. 😉

What do you have planning for the 4th??

I have nothing planned as of yet.  We’re definitely a bit along the spontaneous side when it comes to plans.  It’ll be totally sweet though, no matter what we end up doing!

Office Space

Hey guys!  How have you been??  Sorry I’ve been MIA all week.  It’s just been one of those weeks.

Since I last posted, I have worked a bit, played a bit, gone out to dinner a couple times (including a terrible experience at a restaurant with an incredible waterfront view that had something to do with an iceburg salad and a Boca burger. Ew.), and gone shopping with my wonderful boyfriend.  I got some new Toms! 

Oh em gee. I thought I loved my black Toms, but this is the real thing.  They’re amazing.  And bright.  And another little kid in a third world country got a new pair of shoes!  Toms may be cute and super comfortable, but really the One for One thing is really what makes me love them more than anything.

Today was a pretty typical work day.  I started out with a iced vente soy chai.

Then I got to work and realized how crazy the hospital was today.  Come on people, quit getting sick already!  You’re cramping my style!

Thank goodness for breaks.  For my first meal I bought a bowl of Yukon Gold potato soup from the cafeteria.

I went back to work and sipped on some Tazo Zen green tea with lemon.

My lunch was a salad that had been waiting in the breakroom fridge for me since yesterday afternoon when I decided to buy something instead of eating what I brought.  I guess I was hungry, because I didn’t notice that I didn’t snap a photo until it was almost gone.

Spring mix, spinach, shredded carrot, cucumber, avocado, sunflower seeds and Goddess. 

I answered about 5 billion more phone calls in the office, then munched on some organic split pea soup. 

I still can’t remember the name of this soup brand, but it’s no salt added, and I DEFINTELY have to add my own salt.  I’m pretty sure Keenan put a bunch of sea salt on it before I left, but I tasted it, then ran and grabbed three salt packets and two pepper packets from the cafeteria condiments to add to it.  With my alterations it was perfection.  This may look like green mush, but like so many other foods (green smoothies, anyone?) appearances can be deceiving.

I finished up my work day, and headed out.  As soon as I left the office Keenan texted me to let me know that they let him off of work early!  Tonight’s looking to be pizza and movie night in our household!  Combine that with tomorrow being a day off, plus payday, and I am a pretty happy camper.

Do you have any packaged foods that you doctor up to make extra tasty?

I will definitely salt up my soups if necessary.  Added salt generally shouldn’t be a problem for you unless you have a pre-existing heart condition, which I do not.  Of course, you can also find me liberally adding hot sauce to many dishes, as well.

These Are a Few of My Favorite Things

Good evening!

Depsite yet another night with less than five hours of sleep, I actually had a pretty chill day.  I wasn’t even that tired, although I think it’s finally starting to hit me.

This morning, I purposely slept in and let myself make the hour and a half drive over to Seattle, instead of waking up early enough to catch the ferry.  An extra hour of sleep was definitely worth it, even if my hair did go straight out of the shower into a messy bun, and I’m not wearing any makeup.

Since I was driving, I stopped by Samudra Yoga before heading out of town to grab some breakfast.  I ended up with a 20 oz iced chai with rice milk.

Plus a vegan pumpkin muffin.

I really can’t get enough of their vegan treats.

On my first break I grabbed a coconut curry wrap from the hospital cafeteria.

I had yet another good experience with these wraps from Globespun Gourmet.  It was super yummy.

A bit later I had a salad that I packed for myself last night.

Spring mix, chickpeas, yellow bell pepper, cucumber, avocado, sunflower seeds, and Goddess.  I think the avocado plus my usual amount of dressing was a bit much though.  It was a bit too oily for my taste.  Still tasty though!

My last break I had a bowl of organic lentil soup mixed with some sea salt, pepper, and nutritional yeast.

That’s it so far for food today.  I’m sure I’ll grab a snack when I get home though.

Since I was in such a bad mood yesterday, I decided that today I would do a post about the things that I totally love at the moment.  I figure, if I force myself to think about positive things, then my mood will take a turn for the positive, and it actually did help!  Here’s the list I came up with:

1. My favorite boy, Keenan.  Well, duh.

2. My favorite puppy, Arlo.  Especially how excited he gets when I come home from work, and his awesome cuddling abilities.

3.  My favorite role-models, the parents.

4.  My favorite shoes this summer, my Tom’s and my Rainbows.  I live in these (along with my Havaianas).

5. My favorite dressing.

6.  My favorite True Religion jeggings. 

7.  My favorite way to sleep in when the sun is shining in my window is using this eye mask. I got it at Victoria’s Secret a few years ago.

8.  My favorite vegan cookbooks.  I use post-its to mark the recipes that I want to try.

9.  My favorite sunglasses that I wear pretty much everyday, rain or shine. 

10.  My favorite water bottle, the 40 oz Kleen Kanteen.

11.  My favorite workout, running.

12.  My favorite weather, sunshine.

11.  My favorite storage device, Ball jars.

13.  My favorite days, “weekends”! 

Speaking of which, I’m about to go start my “weekend”!  I hope you have a fabulous week!

Tortilla Soup Recipe

Sup Bloggies?  I hope you’re having a great night!

I’m off of work early, and headed home to….well, I dunno.  Probably just going to sit around the house bored until I decide to go to bed.  Can I repeat enough times how much it’s driving me crazy not to have Keenan at home with me in the evenings???  I will definitely survive though.  Gotta get money somehow.

Work was pretty average, and raced by.

I very much enjoyed my pre-made salad during my first break.

I took a bit of a break from my favorite Annie’s Goddess dressing in a last few weeks to use a Miso Vinaigrette that I bought at Safeway, so it was great to have the Goddess back in action.  It’s just so good!  I can’t even describe it.

During my second break I got to dig back into the tortilla soup that I made last night.  It was definitely still amazing.  Tons of flavor. 

Last night I promised the recipe (my dad actually texted me to ask why it wasn’t in my morning post ;)), so here it is!

Tortilla Soup (adapted from Chile-Lime Tortilla Soup from 1000 Vegan Recipes)

Ingredients

1T olive oil
3 garlic cloves, minced
2 serrano chiles, seeded, 1 minced, 1 cut into 1/4-inch slices
3 cups veggie broth
3 cups water
8 oz Easy Baked Tofu, cut into 1/4 inch strips
1 (14.5 oz) can diced tomatoes, drained
1 (4 oz) can mild chopped green chiles, drained
Sea salt and pepper
1t dry cilantro
3T fresh lime juice
3 (6 inch) corn tortillas, cut into strips
1 avocado

Directions

1.  Preheat the over to 350F.

2.   In a large pot, heat the oil over medium heat.  Add the onion, cover and cook until softened, or about 5 minutes.  Add the garlic and serrano chiles, then stire in the broth, water, tofu, tomatoes, canned chiles, plus sea salt and pepper to taste.

3.  Bring to a boil, then reduce heat to low and simmer, uncovered for 20 minutes.  Stir in the cilantro and lime juice.

4.  While the soup simmers, prepare the tortilla strips.

Spread the strips on a baking sheet and bake for about 8 minutes, until crisp.

Slice the avocado.

5.  Ladle the soup into bowls and top with tortilla strips and avocado.

 

 

 

 

 

 

 

 

You should definitely try it.  It was great with the jalapeno cornbread muffins that I made with it, and I also think it would be great with a side of rice and beans.  Anything Southwest or Mexican would probably be a great accompaniment, actually.

Tortilla Soup and Jalapeno Cornbread Muffins

Happy Friday!  Hope you all had a swell day!

I started my day out nicely by sleeping in until almost 11am.  Keenan getting in so late every night has really taken a toll on my sleep schedule.  Either way though, I love to sleep in, other than the fact that I feel as if I’ve lost most of my day after I do. 

Once we were moving, we took off to do wash a load of our work clothes at the laundromat, and I took my car in to get the tire fixed.  I’ve been car-less the last few days because of a flat, so it was really great to get that taken care of.  For free nonetheless.  Gotta love Les Schwab! 

While we waited for our laundry to finish we grabbed some Subway from down the street.

Yes, Arlo’s wearing a shoelace as a leash.  We forgot the leash and the shoelace was in the car.  I don’t mind looking weird once in a while.

After Keenan went to work I went off on a grocery shopping expedition for the meal I was planning for this evening.  I headed to Silverdale, where our brand new Trader Joe’s was having it’s grand opening!  The crowd made it impossible to check out everything as thoroughly as I would have liked, but I’m sure it will die down by the next time I go shopping.  After swinging by Safeway to buy the rest of the ingredients that I couldn’t find or access at TJ’s, I headed home to get busy in the kitchen.

I started out with jalapeno cornbread muffins.  They were actually originally intended to be regular cornbread, but I didn’t realize until I went to prepare them that I didn’t have an 8 inch baking pan.  However, I did have a muffin pan, so I decided to make an easy switch.

Jalapeno Cornbread Muffins (adapted from Fired-Up Jalapeno Cornbread in 1000 Vegan Recipes)

Ingredients

1 cup whole wheat flour
1 cup yellow cornmeal
2t baking powder
1t salt
1 cup almond milk
3T pure maple syrup
1 cup frozen corn kernels
1/4 cup olive oil
1 fresh jalapeno, chopped
cooking spray

Directions

1. Preheat oven to 375F, lightly coat a muffin pan with cooking spray, and set aside.

2. In a large mixing bowl, mix flour, cornmeal, baking powder, and salt, and set aside.

3.  In another mixing bowl, combine the almond milk, maple syrup, corn kernels, oil and jalapenos.

4.  Add the wet ingredients to the dry ingredients, and mix well with a few quick strokes.

5.  Spoon the batter into the muffin pan, and bake for about 30 minutes, or until a toothpick comes out clean.

6.  Enjoy!!

After my muffins were out of the oven, I decided to finally take off on the run I had been dressed for since before I went grocery shopping. 

Garmin Stats:

I did four laps around the park  at a pretty steady pace, though I tried to make sure I wasn’t slacking.  By the time I was done I was exhausted, especially seeing as 3.4 is about a mile further than what I have been used to running recently.  It’s gonna be so awesome getting back into shape for this race!

When I got back, I gulped down a big glass of water and got to work on the tortilla soup.  I may or may not have devoured one of the muffins as well.  About an hour later the soup was complete and ready for me to eat.  Be sure to check back tomorrow for that recipe.  It’s a great one!

Finally my dinner was ready!

Now I just can’t wait for Keenan to get home and enjoy some as well!  This is a great Southwest-style meal that I would highly recommend.  However, it is not for the weak of tastebuds.  All the hot peppers included in this definitely give it a kick.  Totally my style. 🙂

I’m about to spend the rest of the evening hanging out with Arlo and probably cleaning the apartment.  Such fun!

I Just Wanna Run!

Hey!  How’s everything going out there?  I hope wonderfully!

I spent all day at work today (in between taking phone calls for patient food orders) trying to figure out some new ways to make living healthy more exciting for me.  I feel like I’ve fallen into a bit of a rut lately with my diet and working out, and I need some way to get myself out of it.  Without anything specific keeping me motivated my fitness is slumping and my food is getting pretty boring.

The first thing that occured to me was that…Duh!…I have a blog and readers that I need to keep entertained with what I’m eating!  If I’m bored with the food I’m eating everyday, how can you guys not be?  This week I am going to try to step it up a notch, and make an effort to prepare more, and more interesting, meals at home.  Check back in tomorrow night to see where that leads me!

Secondly, I remembered just how motivated I was to workout when I had something to work towards.  My adventures in running started because, a little over two years ago, I decided to sign up for my first 5K.  I ran on a somewhat regular basis for about two months preparing for the race and then slumped off again for the rest of the year.  The next year, I decided to sign up for the same race again, put myself on a strict training schedule, and blew my first race time (32:26) out of the water with 26:59!  That might not be a great time to some people, but for me, it felt amazing and set me off on a year of a crazy running obsession.  At the end of last summer I began training to run the Seattle Half Marathon, and even ran the full distance in training.  Unfortunately, I had to drop outof the race a few weeks ahead of time, because my schedule at work changed, forcing me to work every single weekend, as I still do today.  My work schedule has kept me from doing any races, but now I think it’s time to change that around, take a Saturday off of work, and run myself a race!

I believe I have decided to run the 4 mile Whale of a Run in Silverdale, Washington on July 30th!  I still need to look into taking the time off work before I will know for sure, but I believe that having a tentative date in mind will be the motivation I need to get out and run my butt off on a regular basis.  I will also take a page from my own book, and actually schedule my runs with myself, rather than leaving it up to chance.  I’m going to begin tomorrow with a 3 mile run, and go from there, mostly following the Hal Higdon Intermediate 5K Training schedule.  Wish me luck!

With that news, let’s get into todays eats!

I’m always a light breakfast eater, but this morning I was in such a hurry that I didn’t really have a chance to grab breakfast, so I just sipped on a Naked coconut water on the ferry, and had a Tazo Passion tea when I got to work.  By the time 2pm rolled around I was ravenous, so my PB&J was extra delicious.

This lucky sandwich actually survived the ride in my backpack today, unlike so many of its predecessors!

My second meal was, as usual, a lovely salad.

I don’t think I will ever give up my salad for work tradition.  They’re just too good, and healthy, and the energy that all that fresh raw produce gives me can’t be matched.  This was pretty standard: spring mix, Roma tomatoes, orange peppers, sprouts, chickpeas, and miso vinaigrette.

My evening meal was a nice bowl of Wolfgang Pucks Classic Tortilla soup. (Which may or may not have influenced tomorrow evening’s meal!)

 

It was good, but nothing too memorable. 

I am currently starving and almost home, so I am definitely going to be making myself an awesome snack when I get there.  I’m pretty stoked to get home and see my Arlo baby.  He spent last night at Keenan’s mom’s house (she’s madly in love with him), so I haven’t actually seen him since she stopped by and picked him up yesterday morning.  I miss him so much!!!  I know, I’m a crazy puppy mama.

What’s your favorite racing moment?

Honestly, mine was completing a 13 mile training run for the half marathon that I never completed.  At least I know that I would have been able to finish if I’d actually run it!

I Could Cry

Not really, but I am so bummed that the Heat lost the NBA Finals!

This is my sad face.

I know, I’m a total weirdo and way too obsessed, but I have been rooting for the Heat since the season started, thinking that they definitely wouldn’t make it this far since they were such a new team.  Plus, I totally love LeBron. 

He’s awesome.  He’s the next Michael Jordan.  I don’t think he’s there yet…he’s too young, but by the time his career is over I think he’s gonna show us all what’s up. 

Okay.  Enough with that rant.  Let’s get to the food!

My first meal at work today was this lovely sandwich.

By “lovely”, obviously I meant “didn’t survive the trip in my backpack, but still tasted bomb”.  Hummus, cucumber and sun-dried tomatoes on Dave’s Killer Bread Good Seed bread.  Great combo!

My salad was also super delicious today, as always.

Spring mix, roma tomatoes, cherry tomatoes, orange pepper, grated carrot, sprouts, garbanzos, and this fantastic Asian miso dressing that I picked up recently. 

I’ve noticed that in my salad pics, all the good veggies seem to hide under the greens. 

See?? Once I get past all those greens there actually are other veggies hiding under there!  Lots and lots of veggie goodness!

By the way, I’ve decided that I need to drown myself in beta-carotene-containing foods so that maybe I can give myself a tan from the inside out.  Not a horrible plan, right?  😉

My soup of the day was Wolfgang Puck’s Classic Minestrone.

Honestly, I think I might like it even more than Amy’s minestrone soup.  Shhhh, don’t tell Amy!!  Wolfgang Puck was the soup brand on sale when I went to Fred Meyer last week.   They were cheaper than the rest of the soup in the health food section, but still more expensive than I would like, at $2 a can.  I think I see some soup-making in my future!

I guess Keenan is bringing me home some tasty treats from the restaurant tonight.  I can’t wait to see what he whips up!

I have the next two days off of work, and other than beginning a new Bible study group tomorrow morning, I really have no idea what my plans will be.  I’m definitely going to get some workouts in, and hang out with my little man, Arlo.  It’s really going to take some adjusting to not having Keenan around 100% of the time that I’m not at work.  I will definitely miss it, but I think it’s good that I’m getting some time to just chill out and do my own thing on occasion.  I will certainly be savoring the time we have together a bit more now that I can’t take it for granted.
